Do the lettuce leaves and strawberries keep growing in after you harvest them, or do you have to plant new seeds every now and then? And does the soil ever get nutrient-depleted and need changing?

Only thing I'd add is that once your lettuce "bolts" or starts to grow a tall central stalk and flower, then it's time to pull it up and plant something new. If you're looking for nice heads of lettuce (like for butter lettuce) and not just the outer leaves, stagger your seed plantings across a couple of weeks. I.e. plant two seeds one week, two more the next, and so on.
